Have them create the account first. Then ask them for their account details. If client is not willing to do this create your own account just to test with test mode enabled
Simon, I noticed you’re api keys are different in woo and stripe. I have the same thing and everything works fine. Stripe told me to check with woocommerce if this is a bug. Is this something you’re aware of? thx

everybody comes here for set up from zero but here we watch your situation. I recommend making a video of every single step who does not know anything and wants to set up.
My initial setup was a failure. Then I removed the plugin and deleted my webhook and followed your instruction to success all worked perfectly. Thanks for the well-constructed less time-consuming and accurate video. (note: I hardly make comments on videos)
